Mbakbaka (Cameroonian Chicken Stew)

Ingredients

  • 2 lbs chicken pieces (with bone or boneless)
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 2 tablespoons vegetable oil
  • 2 cups crushed tomatoes (or tomato purée)
  • 1 cup peanut butter (smooth or chunky)
  • 2 cups chicken stock or water
  • 1-2 hot chili peppers (optional, chopped)
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish

Instructions

  1. Prepare the Chicken

    Rinse the chicken pieces and pat them dry. Season with salt, pepper, paprika, and ground coriander. Set aside while preparing the other ingredients.

  2. Sauté Aromatics

    Heat vegetable oil in a large pot over medium heat. Add chopped onions, garlic, and grated ginger. Cook until softened and fragrant, about 5 minutes.

  3. Brown the Chicken

    Add the chicken pieces to the pot and brown on all sides, sealing in the flavor.

  4. Add Tomatoes and Peanut Butter

    Stir in the crushed tomatoes and peanut butter, mixing well to coat the chicken. Gradually add chicken stock or water to reach a stew-like consistency.

  5. Simmer

    Reduce heat to low, cover, and simmer for 40–50 minutes, or until the chicken is tender and fully cooked. Stir occasionally to prevent sticking and adjust seasoning with salt, pepper, and chili peppers to taste.

  6. Serve

    Serve Mbakbaka hot, garnished with fresh cilantro or parsley.
