Bazeen (Libyan Traditional Dish)

Ingredients

For the Bazeen (Dough):
  • 2 cups barley flour
  • 1/2 teaspoon salt
  • 2 cups water
For the Stew:
  • 500g lamb or beef, cut into cubes
  • 2 large onions, finely chopped
  • 3 garlic cloves, minced
  • 3 tomatoes, peeled and chopped
  • 2 tablespoons tomato paste
  • 2 tablespoons vegetable oil
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon chili powder (optional)
  • Salt and pepper to taste
  • 4 cups water
  • 2 hard-boiled eggs (optional, for garnish)
  • Fresh parsley for garnish

Instructions

  1. Prepare the Bazeen Dough

    In a large pot, bring 2 cups of water to a boil with a pinch of salt. Gradually add the barley flour, stirring continuously to avoid lumps. Reduce heat and knead the mixture in the pot until it forms a smooth, firm dough. Shape it into a dome in the center of the serving plate.

  2. Cook the Meat Stew

    Heat vegetable oil in a large pot over medium heat. Add onions and garlic, sauté until golden. Add meat cubes and brown on all sides. Stir in tomatoes, tomato paste, paprika, cumin, turmeric, chili powder, salt, and pepper. Cook for 5 minutes. Pour in water, cover, and simmer for 1–1.5 hours, or until the meat is tender and the flavors meld.

  3. Serve

    Pour the meat stew around the dome of Bazeen dough. Garnish with hard-boiled eggs and fresh parsley. Serve hot.

Bazeen is traditionally eaten by hand, breaking off pieces of the dough and dipping them into the stew. Pair with a simple salad or pickled vegetables for a complete Libyan meal.
