Mantu (Afghan Dumplings)

Ingredients
For the Dough:
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup water (adjust as needed for dough)
For the Filling:
- 1 pound ground beef or lamb
- 1 medium onion, finely chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground coriander (optional)
For the Sauce and Garnish:
- 1 cup plain yogurt
- 1–2 cloves garlic, minced
- 1 tablespoon butter or oil
- 1/2 cup tomato sauce or pureed tomatoes
- 1 teaspoon dried mint or fresh chopped mint for garnish

Prepare the Dough
In a large bowl, combine flour and salt. Gradually add water, mixing until a soft dough forms. Knead the dough for 8–10 minutes until smooth and elastic. Cover and let it rest for 30 minutes.

Make the Filling
In a bowl, combine ground meat, chopped onion, salt, pepper, turmeric, and coriander. Mix well until fully incorporated.

Assemble the Mantu
Roll out the dough on a lightly floured surface to about 1/8 inch thickness. Cut the dough into squares, roughly 3 inches on each side. Place a small spoonful of meat filling in the center of each square. Fold the corners of each square together, pinching the edges to seal the dumpling.

Steam the Dumplings
Arrange the dumplings in a steamer, making sure they do not touch. Steam over boiling water for 30–40 minutes, or until the dough is cooked and the meat is fully done.

Prepare the Sauce
In a small saucepan, melt butter or heat oil. Add tomato sauce and cook for 3–5 minutes, seasoning with salt and pepper. In a separate bowl, mix yogurt with minced garlic.

Place steamed mantu on a serving plate. Drizzle with tomato sauce and garlic yogurt. Garnish with dried or fresh mint for a burst of color and flavor.
