Instructions

  1. Prepare the Pastry

    In a large bowl, combine flour and salt. Rub in the butter with your fingertips until the mixture resembles breadcrumbs. Gradually add cold water, mixing until a firm dough forms. Wrap in plastic wrap and chill for 30 minutes.

  2. Prepare the Filling

    In a separate bowl, combine diced beef, potato, swede, and onion. Season generously with salt and pepper, then mix well.

  3. Assemble the Pasties

    Preheat the oven to 400°F (200°C). Divide the dough into 4 equal portions. Roll each portion into a circle about 8 inches in diameter. Place a generous amount of filling on one half of each circle, leaving a border around the edge. Dot the filling with small pieces of butter. Fold the pastry over to enclose the filling, forming a half-moon shape. Press the edges firmly together, then crimp decoratively to seal.

  4. Bake the Pasties

    Place the pasties on a parchment-lined baking sheet. Brush each one with the egg wash. Bake for 45–50 minutes, or until golden brown and crisp.
