Sahawiq (Yemeni Spicy Sauce)

Ingredients

  • 6-8 fresh red chili peppers (adjust to taste)
  • 4 cloves garlic, peeled
  • 1 small bunch fresh coriander (cilantro), roughly chopped
  • 1 small bunch fresh parsley, roughly chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon salt (adjust to taste)
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice or vinegar

Instructions

  1. Prepare the Ingredients

    Remove the stems from the chili peppers and roughly chop them. Wash and roughly chop the coriander and parsley.

  2. Blend the Sauce

    In a food processor or mortar and pestle, combine chili peppers, garlic, coriander, parsley, cumin, ground coriander, cardamom, black pepper, and salt. Blend until a coarse paste forms.

  3. Add Oil and Lemon

    Gradually add olive oil while blending to create a smooth consistency. Stir in lemon juice or vinegar to brighten the flavors. Adjust seasoning to taste.

  4. Serve

    Sahawiq can be served as a condiment with grilled meats, roasted vegetables, rice dishes, or traditional Yemeni flatbread. Store any leftovers in an airtight container in the refrigerator for up to a week.
