Shurbo (Central Asian Soup)

Ingredients
- 1 lb lamb or beef, cut into chunks
- 1 large onion, chopped
- 2 carrots, sliced
- 2 potatoes, diced
- 1 bell pepper, chopped
- 2 tomatoes, peeled and chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 6 cups water or broth
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh parsley, chopped
- 2 tablespoons vegetable oil

Prepare the Meat
Heat vegetable oil in a large pot over medium heat. Add meat chunks and brown on all sides. Remove the meat and set aside.

Cook the Vegetables
In the same pot, add onions and garlic, sautéing until fragrant. Add carrots, potatoes, bell pepper, and tomatoes, cooking for 5–7 minutes.

Simmer the Soup
Return the meat to the pot. Add water or broth, cumin, paprika, salt, and pepper. Bring to a boil, then reduce heat and simmer for 1–1.5 hours, until the meat is tender and flavors are well blended.

Stir in fresh cilantro and parsley just before serving. Adjust seasoning as needed.
