Ingredients

  • 1/2 tsp (2.5 g) garlic, minced
  • 1/2 tsp (2.5 g) salt
  • Optional: 1/2 lb (225 g) smoked fish or dried shrimp for added flavor

Instructions

  1. Prepare the Cassava Leaves

    If using fresh cassava leaves, wash them thoroughly and finely chop. If using frozen, thaw and rinse.

  2. Sauté Aromatics

    Heat vegetable oil in a large pot over medium heat. Add onions and garlic, cooking until fragrant.

  3. Add Tomatoes and Cassava Leaves

    Stir in the diced tomatoes and cook until softened. Add the cassava leaves and mix well.

  4. Cook the Mixture

    Pour in the water and bring to a boil. Reduce the heat to low and simmer for 30-40 minutes, stirring occasionally.

  5. Incorporate Peanut Butter

    Stir in the peanut butter until fully combined. If using smoked fish or shrimp, add them at this stage. Cook for an additional 10-15 minutes, allowing the flavors to meld.

  6. Season and Finish

    Add salt to taste. Adjust the consistency by adding more water if needed.
