Yassa (Senegalese Chicken Stew)

- 2 pounds (about 1 kg) chicken pieces (legs or thighs preferred)
- 4 large onions, thinly sliced
- 3 cloves garlic, minced
- 2 lemons (juice only)
- 2 tablespoons Dijon mustard
- 1 Scotch bonnet or chili pepper, finely chopped (optional for heat)
- 1 teaspoon black pepper
- 1 teaspoon salt
- 3 tablespoons vegetable oil
- 1 cup chicken broth or water
- 1 bay leaf

Marinate the Chicken
In a large bowl, combine lemon juice, mustard, garlic, salt, and pepper. Add the chicken pieces and toss to coat evenly. Cover and let marinate in the refrigerator for at least 2 hours, or overnight for deeper flavor.

Remove the chicken from the marinade (reserve the marinade) and pat it dry. Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the chicken pieces on all sides until golden. Remove and set aside.
