Margooga (Sudanese Lentil and Meat Stew)

Ingredients

  • 1 lb (450 g) lamb or beef, cut into bite-sized pieces
  • 1 cup red lentils, rinsed
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium tomatoes, chopped
  • 1 small carrot, diced
  • 1 small potato, diced
  • 1/4 cup vegetable oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground cinnamon
  • Salt and pepper to taste
  • 4 cups water or beef broth
  • Fresh cilantro or parsley, for garnish

Instructions

  1. Prepare the Meat

    Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and garlic, sautéing until fragrant and golden. Add the meat pieces and brown them on all sides.

  2. Add Spices and Vegetables

    Stir in the cumin, coriander, turmeric, paprika, cinnamon, salt, and pepper. Mix well to coat the meat with the spices. Add the chopped tomatoes, carrot, and potato, cooking for 5–7 minutes until slightly softened.

  3. Simmer with Lentils

    Add the rinsed lentils and pour in the water or broth. Bring the mixture to a boil, then reduce the heat and cover. Simmer for 40–50 minutes, stirring occasionally, until the meat and lentils are tender and the stew has thickened. Adjust seasoning as needed.

  4. Serve

    Ladle the Margooga into bowls and garnish with fresh cilantro or parsley. Serve hot, accompanied by flatbread or rice for a complete Sudanese meal.
