Boerewors (South African Sausage)

Ingredients

  • 2 pounds beef, coarsely ground
  • 1 pound pork, coarsely ground
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 teaspoons coriander seeds, toasted and crushed
  • 1 teaspoon nutmeg
  • 1 teaspoon cloves
  • ½ cup red wine or vinegar
  • Sausage casings, soaked and rinsed

Instructions

  1. Prepare the Meat Mixture

    In a large bowl, combine the ground beef and pork. Add salt, pepper, crushed coriander seeds, nutmeg, and cloves. Mix thoroughly until the spices are evenly distributed throughout the meat. Gradually add the red wine or vinegar and continue mixing until the mixture is slightly sticky.

  2. Stuff the Sausages

    Fit a sausage stuffer with the prepared casing. Carefully fill the casings with the meat mixture, making sure not to overstuff. Twist the sausages into coils of desired length, ensuring they are evenly packed.

  3. Cook the Boerewors

    Preheat your grill or braai to medium-high heat. Cook the Boerewors coils slowly, turning occasionally to ensure even cooking, for about 20–25 minutes or until browned and cooked through. Avoid piercing the sausages to keep the juices inside.

  4. Serve

    Serve Boerewors hot off the grill, accompanied by traditional sides such as pap (maize porridge), chakalaka, or a fresh salad. Boerewors pairs wonderfully with mustard or a tangy tomato relish for added flavor.
