Ingredients
- 1 kg (2.2 lbs) firm white fish (such as kingfish, cod, or tilapia), cut into chunks
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 4 garlic cloves, minced
- 1 teaspoon fresh ginger, grated
- 2 tomatoes, chopped
- 1 teaspoon turmeric powder
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1/2 teaspoon ground black pepper
- 1 teaspoon paprika (optional, for color)
- 2 cups water or fish stock
- 1-2 green chilies, slit (adjust to taste)
- 1 tablespoon lemon juice
- Salt to taste
- Fresh cilantro or parsley for garnish

Heat vegetable oil in a large pot over medium heat. Add the chopped onions and sauté until soft and translucent. Stir in the garlic and ginger, cooking for another 1-2 minutes until fragrant.

Add turmeric, coriander, cumin, black pepper, and paprika (if using). Stir to coat the onions and release the aromas. Add chopped tomatoes and cook until they soften and form a thick, fragrant sauce.
