Gonja (Fried Plantain)

Ingredients
- 3 ripe plantains (yellow with black spots)
- 3 cups canola or vegetable oil (for deep frying)
- ½ teaspoon salt

Prepare the Plantains
Wash the plantains thoroughly under running water. Using a sharp knife, trim both ends of each plantain. Make a shallow slit along the natural seam of the peel and remove the skin.

Slice the Plantains
Cut the peeled plantains diagonally into medium-sized slices. For crispier results, thinner slices are preferable.

Heat the Oil
Pour the oil into a large skillet or deep pan and heat over medium heat. To test if the oil is ready, drop a small piece of plantain into the oil; it should sizzle immediately.

Fry the Plantains
Carefully add the plantain slices to the hot oil in batches, ensuring not to overcrowd the pan. Fry each batch for about 2–3 minutes per side, or until golden brown and crispy.

Drain and Season
Using a slotted spoon, remove the fried plantains from the oil and place them on a paper towel-lined plate to drain excess oil. While still hot, sprinkle with salt to taste.

Gonja is versatile and can be enjoyed in various ways:

- Paired with soups like Molokoni.
