- 1 teaspoon thyme
- 1 teaspoon parsley, chopped
- 2 bay leaves
- 1/2 teaspoon black pepper

- 8 cups beef or chicken broth
- 2 cups potatoes, peeled and cubed
- 1 cup pasta (optional, small shapes like macaroni)
- 2 tablespoons olive oil or vegetable oil
- 1 lime or lemon (for washing vegetables)

Prepare the Vegetables
Wash all vegetables with lime or lemon water to remove impurities. Peel and cut the pumpkin, carrots, potatoes, and other vegetables into bite-sized pieces.

Brown the Beef
Heat oil in a large pot over medium-high heat. Season beef cubes with salt and pepper, then brown them on all sides. Remove the beef and set aside.

Cook the Soup Base
In the same pot, sauté onions, garlic, celery, and thyme until fragrant. Return the beef to the pot, add broth, bay leaves, and whole Scotch bonnet pepper. Bring to a boil, then reduce heat and simmer for about 1 to 1.5 hours until the beef is tender.
