Lagman (Central Asian Noodle Soup)

Experience the bold and aromatic flavors of Central Asia with Lagman, a traditional noodle soup that combines tender beef, colorful vegetables, and hand-pulled noodles in a rich, spiced broth. This hearty dish is a beloved staple in Uzbek, Kyrgyz, and Uyghur cuisines, offering a perfect balance of warmth, comfort, and depth of flavor.

Ingredients

  • 400 g beef (preferably chuck or flank), cut into small cubes
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 medium carrots, cut into thin strips
  • 2 medium tomatoes, chopped (or 1 cup canned tomatoes)
  • 2 potatoes, peeled and cubed
  • 1 tablespoon tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • Salt and black pepper to taste
  • 6 cups beef or vegetable broth
  • 300 g hand-pulled noodles (or thick wheat noodles)
  • Fresh cilantro or parsley for garnish

Instructions

  1. Prepare the Beef and Vegetables

    Heat vegetable oil in a large pot over medium-high heat. Add the beef and brown on all sides until a deep color develops. Remove and set aside.

  2. Build the Base

    In the same pot, add the chopped onion and garlic. Sauté until fragrant and golden. Add the bell peppers and carrots, cooking for about 5 minutes until slightly softened.

  3. Add the Tomatoes and Spices

    Stir in the chopped tomatoes and tomato paste. Add cumin, paprika, coriander, salt, and pepper. Cook for 3–4 minutes until the mixture becomes thick and aromatic.

  4. Simmer the Soup

    Return the browned beef to the pot. Add the cubed potatoes and pour in the broth. Bring to a boil, then reduce the heat to low and simmer for 45–60 minutes, or until the beef and vegetables are tender.

  5. Cook the Noodles

    In a separate pot, cook the noodles according to package instructions, or prepare hand-pulled noodles if making from scratch. Drain and rinse briefly.

  6. Serve

    Place a portion of noodles in each bowl. Ladle the hot soup over the noodles, ensuring each serving gets plenty of beef and vegetables. Garnish with fresh cilantro or parsley.
