Ingredients
For the Noodles:
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup water (adjust as needed)
- 1 tablespoon vegetable oil
For the Meat and Vegetables:
- 1 lb (450 g) beef or lamb, thinly sliced
- 2 tablespoons vegetable oil
- 1 large onion, sliced
- 2 carrots, julienned
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 3 cloves garlic, minced
- 1 medium tomato, chopped
- 2 tablespoons soy sauce
- 1 teaspoon ground cumin
- 1/2 teaspoon ground black pepper
- Salt to taste
- 1/2 cup beef or vegetable broth
- Fresh cilantro or green onions, for garnish

Prepare the Noodles
In a large bowl, combine flour and salt. Gradually add water, mixing until a firm dough forms. Knead for 8–10 minutes until smooth and elastic. Cover and let rest for 30 minutes. Roll the dough into thin strips and cut into noodles, or stretch by hand if preferred. Boil in salted water for 3–5 minutes until tender, then drain and set aside.

Cook the Meat
Heat vegetable oil in a large skillet or wok over medium-high heat. Add the sliced meat and stir-fry until browned and cooked through. Remove from the skillet and set aside.

In the same skillet, add onion, carrots, and bell peppers. Stir-fry for 5–7 minutes until slightly softened. Add garlic and tomato, cooking for another 2 minutes.
