Sambusa (Savory Stuffed Pastries)

Ingredients

- 1/4 cup vegetable oil

- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon chili powder (optional)
- Salt and pepper to taste
- 2 tablespoons chopped fresh cilantro or parsley
- Vegetable oil for frying

Prepare the Dough
In a large bowl, combine flour and salt. Add 1/4 cup vegetable oil and mix until crumbly. Gradually add water and knead into a smooth, elastic dough. Cover and let rest for 30 minutes.

Heat a skillet over medium heat. Add ground meat and cook until browned. Stir in onion and garlic, cooking until softened. Add cumin, coriander, cinnamon, chili powder, salt, and pepper. Mix well and cook for another 2–3 minutes. Remove from heat and stir in chopped cilantro or parsley. Let the filling cool.

Divide the dough into small balls. Roll each ball into a thin circle, then cut into halves to form semi-circles. Place a spoonful of filling on each semi-circle and fold into a triangle, sealing the edges with water.

Fry the Sambusa
Heat vegetable oil in a deep skillet over medium-high heat. Fry the Sambusa in batches until golden brown and crispy, about 2–3 minutes per side. Drain on paper towels to remove excess oil.
