Ingredients:
1 cup (200g) Mixed Sprouted Beans (Black Gram, Green Gram, Kidney Beans, Chickpeas, Lentils, etc.)
1/2 cup (100g) Mixed Grains (Barley, Buckwheat, Green Wheat, Millet, Rice, etc.)
1/2 cup (100g) Pumpkin, diced
1/2 cup (100g) Sweet Potato, diced
1/2 cup (100g) Carrots, diced
1/2 cup (100g) Spinach, chopped
1 Onion, finely chopped
4 cloves Garlic, minced
1 tsp Ginger, grated
2 tbsp Ghee or Vegetable Oil
1 tsp Cumin Powder
1 tsp Coriander Powder
1/2 tsp Turmeric Powder
Salt and Pepper to taste
Fresh Cilantro for garnish
Instructions:
Prepare the Beans and Grains:
Soak and sprout a mixture of beans. Boil mixed grains until partially cooked.
Cook the Soup:
In a pot, heat ghee or vegetable oil. Sauté chopped onion until golden. Add minced garlic, grated ginger, cumin powder, coriander powder, turmeric powder, salt, and pepper. Stir well. Add sprouted beans, partially cooked grains, diced pumpkin, sweet potato, and carrots. Pour in enough water to cover the ingredients. Simmer until all ingredients are tender.
Serving:
Garnish Kwati with chopped spinach and fresh cilantro. Serve hot, and savor the wholesome goodness of this multigrain delight.
