Discovering Halušky with Cabbage and Bacon

Halušky with Cabbage and Bacon is a cherished Slovakian dish that combines the comfort of potato dumplings with the earthy sweetness of sautéed cabbage and the savory crunch of bacon bits. It's a delightful symphony of flavors and textures that's beloved in Slovakia and beyond.

Ingredients You'll Need:

500g (1.1 lbs) Potatoes

250g (8.8 oz) All-purpose flour

1 Egg

Salt to taste

Water

1 Small cabbage, finely shredded

150g (5.3 oz) Bacon, diced

1 Onion, finely chopped

Butter or oil for frying

Bryndza cheese (or feta cheese) for serving (optional)

Chopped chives or parsley for garnish (optional)

Instructions:

Preparing Halušky:

Begin by boiling and peeling 500g (1.1 lbs) of potatoes until they are tender. Then mash them while they're still warm.

In a large mixing bowl, combine the mashed potatoes, 250g (8.8 oz) of all-purpose flour, one beaten egg, and a pinch of salt. Mix to form a dough.

Bring a large pot of salted water to a boil.

To make the dumplings, take a portion of the dough and roll it into a long rope about the thickness of your thumb. Cut it into small pieces, about 1-2 cm long. Repeat with the remaining dough.

Drop the dumplings into the boiling water. They are done when they rise to the surface, which usually takes 2-3 minutes. Remove them with a slotted spoon and drain.

Sautéing Cabbage and Bacon:

In a large skillet, heat butter or oil over medium heat. Add the diced bacon and cook until it becomes crispy.

Add the finely chopped onion and sauté until it becomes translucent.

Stir in the finely shredded cabbage and cook until it becomes tender and slightly caramelized, about 15-20 minutes.

Serving Halušky with Cabbage and Bacon:

Serve the cooked Halušky hot, topped with the sautéed cabbage and bacon mixture. If desired, crumble bryndza cheese (or feta cheese) over the top for added flavor.

Garnish with chopped chives or parsley for a fresh touch.
