Ingredients:

For Bogobe:

1 cup (200 g) sorghum or maize meal

4 cups (1 liter) water

1 teaspoon (5 g) salt

Optional: 1 tablespoon (15 ml) milk or butter for extra creaminess

Instructions:

Boil the Water: In a large pot, bring 3 cups (750 ml) of water to a boil. Reserve 1 cup (250 ml) for mixing the meal.

Prepare the Meal Paste: In a bowl, mix the sorghum or maize meal with the reserved 1 cup of water. Stir until a smooth paste forms, ensuring no lumps.

Cook the Porridge: Gradually pour the meal paste into the boiling water, stirring continuously to prevent lumps. Reduce the heat to low and allow the porridge to simmer. Stir occasionally for 15–20 minutes until it thickens to your desired consistency.

Season and Finish: Add salt to taste and stir well. For a richer flavor, mix in milk or butter during the final minutes of cooking.
