Kvas (Traditional Russian Fermented Beverage)

- 500 g rye bread, cut into cubes
- 4 liters water
- 150 g sugar
- 10 g active dry yeast
- 50 g raisins (optional, for added flavor)
- 1 tablespoon honey (optional)

Prepare the Bread
Preheat the oven to 180°C (350°F). Spread the rye bread cubes on a baking sheet and toast until dark brown but not burnt, about 15–20 minutes. This will give Kvas its characteristic deep flavor.

Make the Bread Infusion
Boil 4 liters of water in a large pot. Remove from heat and add the toasted bread cubes. Let steep for 4–6 hours, or until the water cools and absorbs the bread’s flavor.

Strain and Sweeten
Strain the liquid into a clean container, pressing lightly to extract the flavors from the bread. Dissolve sugar in the warm liquid. Allow it to cool to about 25–30°C (77–86°F).

Ferment the Kvas
In a small bowl, dissolve the yeast in a few tablespoons of lukewarm water. Add the yeast to the bread liquid along with raisins and honey if using. Cover with a clean cloth and leave to ferment at room temperature for 12–24 hours, depending on the desired tanginess.

Bottle and Chill
Strain the Kvas again to remove solids. Pour into clean bottles, leaving some space at the top. Seal and refrigerate for at least 12 hours to develop natural carbonation.

Serve chilled in glasses. Kvas can be enjoyed on its own or used as a base for traditional Russian cold soups like okroshka.
