Pelmeni (Russian Dumplings)

Ingredients

For the Dough:
  • 3 cups all-purpose flour
  • 1 large egg
  • 1/2 cup water
  • 1/2 teaspoon salt
For the Filling:
  • 1/2 pound ground beef
  • 1/2 pound ground pork
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • Salt and pepper to taste
For Cooking:
  • 4 cups water or broth
  • 1 teaspoon salt
To Serve:
  • Sour cream
  • Butter (optional)
  • Fresh dill, chopped

Instructions

  1. Make the Dough

    In a large bowl, combine flour and salt. Beat the egg with water and gradually add to the flour, kneading until a smooth dough forms. Cover and let rest for 30 minutes.

  2. Prepare the Filling

    In a bowl, mix ground beef, ground pork, chopped onion, garlic, salt, and pepper until well combined.

  3. Form the Pelmeni

    Roll the dough thin on a floured surface. Cut into circles (about 3 inches in diameter). Place a small spoonful of filling in the center of each circle. Fold the dough over the filling and pinch the edges firmly to seal. Optionally, bring the corners together to create a traditional dumpling shape.

  4. Cook the Pelmeni

    Bring water or broth to a boil in a large pot and add salt. Drop the pelmeni in batches and cook for 5–7 minutes, or until they float to the surface and the filling is cooked through.

  5. Serve

    Serve hot with a dollop of sour cream, a pat of butter, and a sprinkle of fresh dill.

Serving

Pelmeni are traditionally enjoyed with sour cream, but they can also be served in broth or with vinegar and mustard for a different twist. These hearty dumplings bring warmth and comfort to the table, making them a beloved staple of Russian cuisine.
