Salo (Ukrainian Cured Pork Fat)

Ingredients

  • 1 lb (450 g) pork fat (preferably with a thin layer of meat)
  • 4–5 garlic cloves, sliced thinly
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika (optional)
  • 1 teaspoon crushed chili flakes (optional)
  • Fresh herbs (like dill, bay leaf, or thyme)

Instructions

  1. Prepare the Pork Fat

    Trim the pork fat into rectangular slabs, leaving a thin layer of meat for flavor. Pat dry with paper towels.

  2. Season the Salo

    Rub each slab generously with salt and black pepper. Insert garlic slices into small incisions across the fat. Sprinkle paprika and chili flakes if using. Layer fresh herbs on top.

  3. Cure the Salo

    Place the seasoned slabs in a glass or ceramic container. Cover and refrigerate for at least 5–7 days to allow the flavors to meld. For a stronger taste, cure up to 2 weeks.

  4. Serve

    Slice the Salo thinly. Serve chilled with dark rye bread, pickles, onions, or mustard.
