Kibbeh (Middle Eastern Meat and Bulgur Patties)

Kibbeh is a classic dish from the Middle East, featuring a delicate mixture of ground meat, bulgur, and aromatic spices. Crispy on the outside and tender on the inside, Kibbeh is perfect as an appetizer, snack, or main course. Its rich flavor and satisfying texture make it a beloved dish across the region.

Ingredients

For the Shell:
  • 2 cups fine bulgur wheat
  • 1 pound ground lamb or beef
  • 1 small onion, finely chopped
  • 1 teaspoon ground allspice
  • 1 teaspoon ground cinnamon
  • Salt and pepper to taste
  • Cold water as needed

  • 2 tablespoons olive oil

  • Vegetable oil

Instructions

  1. Prepare the Bulgur

    Place the bulgur in a large bowl and cover with cold water. Let it soak for about 15 minutes until soft. Drain and squeeze out excess water.

  2. Make the Shell Mixture

    In a bowl, combine the soaked bulgur, ground meat, chopped onion, allspice, cinnamon, salt, and pepper. Knead the mixture until smooth, adding a little cold water if needed to achieve a dough-like consistency.

  3. Prepare the Filling

    Heat olive oil in a skillet over medium heat. Sauté the chopped onion until soft and translucent. Add ground meat, allspice, cinnamon, salt, and pepper. Cook until the meat is browned, then stir in toasted pine nuts. Remove from heat and let cool slightly.

  4. Shape the Kibbeh

    Take a small portion of the bulgur mixture and shape it into a ball. Using your finger, create a hollow in the center and fill it with the prepared meat mixture. Close the opening and shape into an oval or football shape. Repeat with remaining ingredients.

  5. Cook the Kibbeh

    Heat vegetable oil in a deep pan over medium-high heat. Fry the Kibbeh in batches until golden brown and crispy on all sides, about 5-7 minutes. Remove and drain on paper towels.

  6. Serve

    Serve Kibbeh hot with yogurt, tahini sauce, or a fresh salad. They also pair well with lemon wedges for an added zest.
