Ingredients

  • 1 cup (0.2 kg) brown lentils, rinsed

  • 1 can (15 oz / 425 g) chickpeas, drained and rinsed
  • 2 cups (480 ml) tomato sauce
  • 3 cloves garlic, minced
  • 2 tbsp (30 ml) white vinegar
  • 2 tbsp (30 ml) vegetable oil
  • 1 tbsp (15 g) ground cumin
  • 1 tsp (5 g) ground coriander
  • 1 tsp (5 g) paprika
  • 1/4 tsp (1 g) cayenne pepper (optional)
  • Salt, to taste
  • Pepper, to taste
  • Oil for frying

Instructions

  1. Cook the Lentils

    In a medium pot, add the rinsed lentils and cover with water. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until the lentils are tender but not mushy. Drain and set aside.

  2. Cook the Rice

    In a separate pot, cook the rice according to the package instructions using salted water. Once cooked, fluff with a fork and set aside.

  3. Cook the Pasta

    In another pot, bring salted water to a boil and cook the macaroni or small pasta until al dente. Drain and set aside.

  4. Fry the Onions

    In a large skillet, heat enough oil to cover the bottom. Add the thinly sliced onions and fry until golden brown and crispy. Remove with a slotted spoon and drain on paper towels. Set aside.

  5. Make the Tomato Sauce

    In the same skillet, heat 2 tbsp of vegetable oil over medium heat. Add the minced garlic and sauté until fragrant. Add tomato sauce, cumin, coriander, paprika, and cayenne pepper (if using). Simmer for about 10 minutes, stirring occasionally. Season with salt and pepper to taste.

  6. Prepare the Vinegar Dressing

    In a small bowl, mix white vinegar with a pinch of salt, a pinch of ground cumin, and minced garlic. Stir well and set aside.

  7. Assemble the Koshari

    In a large serving dish, layer rice, lentils, pasta, and chickpeas. Drizzle tomato sauce over the top, then sprinkle with crispy fried onions. Serve the vinegar-garlic dressing on the side for customization.
