Ingredients

  • 1 lb (450 g) lamb or beef, cut into 1-inch cubes
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon salt
  • Juice of 1 lemon
  • Wooden or metal skewers, soaked in water if wooden

Instructions

  1. Prepare the Marinade

    In a large bowl, combine the chopped onion, garlic, olive oil, cumin, coriander, paprika, cinnamon, black pepper, salt, and lemon juice. Mix well to create a flavorful marinade.

  2. Marinate the Meat

    Add the meat cubes to the marinade and toss to coat thoroughly. Cover and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to penetrate the meat.

  3. Assemble the Kebabs

    Thread the marinated meat onto skewers, leaving a small space between each piece to ensure even cooking.

  4. Grill the Kebabs

    Preheat a grill or grill pan over medium-high heat. Cook the kebabs for 10–12 minutes, turning occasionally, until the meat is browned on the outside and cooked to your desired doneness.
