Pide (Turkish Flatbread with Toppings)

Ingredients

  • 3 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 2 teaspoons instant yeast
  • 1 cup warm water
  • 2 tablespoons olive oil
  • 1/2 cup plain yogurt
  • 1 egg (for egg wash)
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup parsley, chopped
  • 1 small tomato, thinly sliced
  • 1 small green pepper, thinly sliced
  • Optional: ground beef or sucuk (Turkish sausage), cooked

Instructions

  1. Prepare the Dough

    In a large bowl, combine flour, salt, sugar, and yeast. Gradually add warm water, olive oil, and yogurt. Mix until a soft dough forms. Knead the dough on a floured surface for about 8–10 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a cloth, and let it rise for 1–1.5 hours until doubled in size.

  2. Shape the Pide

    Preheat your oven to 450°F (230°C). Punch down the dough and divide it into 4 equal portions. Roll each portion into an oval shape, about 1/4 inch thick, on a lightly floured surface.

  3. Add the Toppings

    Mix feta, mozzarella, and parsley in a bowl. Spread the cheese mixture evenly over the center of each oval, leaving a border around the edges. Add sliced tomatoes, green peppers, and optional cooked meat on top. Fold the edges of the dough inward to create a boat shape.

  4. Bake the Pide

    Beat the egg and brush the edges of the dough with it for a golden finish. Place the Pide on a baking sheet lined with parchment paper. Bake for 12–15 minutes, or until the crust is golden and the cheese is melted.

  5. Serve

    Remove from the oven and let cool slightly before slicing. Serve warm.
