- 1 cup semolina
- 1/2 cup ghee or unsalted butter
- 3/4 cup sugar
- 2 cups water
- 1/4 teaspoon cardamom powder
- 1/4 cup chopped nuts (almonds, cashews, pistachios)
- 1 tablespoon raisins (optional)

Prepare the Syrup
In a small saucepan, combine water and sugar. Heat over medium heat until the sugar dissolves completely. Add cardamom powder and bring to a gentle simmer. Remove from heat and set aside.

Roast the Semolina
In a heavy-bottomed pan, heat ghee over medium heat. Add semolina and roast, stirring constantly, until it turns golden brown and emits a nutty aroma. This should take about 8–10 minutes. Be careful not to burn it.

Combine Semolina and Syrup
Slowly pour the warm sugar syrup into the roasted semolina, stirring continuously to avoid lumps. The mixture will bubble vigorously - stir carefully.

Add chopped nuts and raisins, stirring until fully incorporated. Reduce heat to low and cook for another 2–3 minutes until the Halva thickens and starts leaving the sides of the pan.
