Bryndzové Halušky (Slovak Potato Dumplings with Sheep Cheese)

Ingredients

  • 500 g (1.1 lbs) potatoes, peeled
  • 150 g (1.3 cups) all-purpose flour
  • 1 teaspoon salt
  • 200 g (7 oz) bryndza (sheep cheese)
  • 150 g (5 oz) bacon, diced
  • 2 tablespoons sour cream (optional)
  • Fresh chives or parsley, chopped, for garnish

Instructions

  1. Prepare the Dough

    Grate the peeled potatoes finely and squeeze out excess liquid. In a large bowl, mix the grated potatoes with flour and salt to form a soft, slightly sticky dough.

  2. Form the Halušky

    Bring a large pot of salted water to a boil. Using a spoon or halušky maker, drop small pieces of dough into the boiling water. Cook until the dumplings float to the surface, about 2–3 minutes. Remove with a slotted spoon and set aside.

  3. Cook the Bacon

    In a skillet over medium heat, cook the diced bacon until crispy. Remove from heat and set aside, keeping the rendered fat in the pan.

  4. Combine and Serve

    Place the cooked halušky in a large bowl. Add bryndza and mix until the cheese melts and coats the dumplings. Drizzle with the bacon and fat, stirring gently. Add a dollop of sour cream if desired.

  5. Garnish

    Sprinkle with fresh chives or parsley before serving.
