Kak’ik (Guatemalan Turkey Soup)

Ingredients
- 1 whole turkey (about 4–5 lbs), cut into pieces
- 6 cloves garlic, minced
- 1 large onion, chopped
- 3 tomatoes, roasted and peeled
- 3 Guajillo or Pasilla peppers, roasted, soaked, and seeded
- 1/2 bunch cilantro
- 1 tsp achiote (annatto)
- 1 tsp dried oregano
- 1 tsp ground black pepper
- 1 cinnamon stick
- 6 cups chicken or turkey broth
- Salt to taste
- 2 tablespoons vegetable oil
- 2 corn tortillas, toasted and crumbled (optional, for thickening)

Prepare the Turkey
Clean the turkey pieces and season with salt. In a large pot, heat vegetable oil over medium heat. Brown the turkey pieces on all sides, then remove and set aside.

Make the Sauce
In a blender, combine roasted tomatoes, roasted peppers, garlic, onion, cilantro, achiote, oregano, and black pepper. Blend until smooth. Strain if desired for a smoother texture.

Simmer
Return the turkey to the pot. Pour the blended sauce over the turkey and add the cinnamon stick and broth. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours, or until the turkey is tender and the flavors are fully developed.

Thicken (Optional)
If a thicker soup is desired, gradually stir in the toasted and crumbled tortillas until fully incorporated.
