Kak’ik (Guatemalan Turkey Soup)

Ingredients

  • 1 whole turkey (about 4–5 lbs), cut into pieces
  • 6 cloves garlic, minced
  • 1 large onion, chopped
  • 3 tomatoes, roasted and peeled
  • 3 Guajillo or Pasilla peppers, roasted, soaked, and seeded
  • 1/2 bunch cilantro
  • 1 tsp achiote (annatto)
  • 1 tsp dried oregano
  • 1 tsp ground black pepper
  • 1 cinnamon stick
  • 6 cups chicken or turkey broth
  • Salt to taste
  • 2 tablespoons vegetable oil
  • 2 corn tortillas, toasted and crumbled (optional, for thickening)

Instructions

  1. Prepare the Turkey

    Clean the turkey pieces and season with salt. In a large pot, heat vegetable oil over medium heat. Brown the turkey pieces on all sides, then remove and set aside.

  2. Make the Sauce

    In a blender, combine roasted tomatoes, roasted peppers, garlic, onion, cilantro, achiote, oregano, and black pepper. Blend until smooth. Strain if desired for a smoother texture.

  3. Simmer

    Return the turkey to the pot. Pour the blended sauce over the turkey and add the cinnamon stick and broth. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours, or until the turkey is tender and the flavors are fully developed.

  4. Thicken (Optional)

    If a thicker soup is desired, gradually stir in the toasted and crumbled tortillas until fully incorporated.

  5. Serve

    Serve Kak’ik hot, garnished with fresh cilantro and accompanied by rice, lime wedges, or tamales.
