Pepián (Guatemalan Chicken Stew)

Experience the deep, rich flavors of Guatemalan cuisine with Pepián, a hearty and aromatic stew made with chicken, roasted spices, and vegetables. This comforting dish is perfect for special family gatherings or as a flavorful weeknight meal, offering a taste of Central American tradition in every bite.

Ingredients

  • 2 lbs chicken pieces (thighs, drumsticks, or a mix)
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 medium tomatoes, roasted
  • 1/4 cup roasted pumpkin seeds
  • 1/4 cup roasted sesame seeds
  • 1/2 cup roasted pepitas (or substitute with peanuts if unavailable)
  • 2 dried guajillo or pasilla chilies, seeds removed
  • 1 cinnamon stick
  • 1 clove
  • 2 cups chicken broth
  • 2 medium potatoes, peeled and cut into chunks
  • 1 medium carrot, sliced
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. Prepare the Sauce

    Roast the chilies lightly in a dry skillet until fragrant. In a blender, combine roasted tomatoes, onion, garlic, pumpkin seeds, sesame seeds, pepitas, cinnamon, and cloves. Blend until smooth, adding a little water or chicken broth if needed to create a thick sauce.

  2. Cook the Chicken

    Heat vegetable oil in a large pot over medium heat. Brown the chicken pieces on all sides, then remove and set aside.

  3. Simmer the Stew

    Pour the blended sauce into the pot and cook for 5–7 minutes, stirring constantly. Return the chicken to the pot and add chicken broth. Bring to a boil, then reduce heat to low. Cover and simmer for 30–40 minutes, until the chicken is tender.

  4. Add Vegetables

    Add potatoes and carrots to the pot. Continue to simmer for another 15–20 minutes until the vegetables are cooked through. Season with salt and pepper to taste.

  5. Serve

    Serve Pepián hot, garnished with fresh cilantro. Pair with steamed rice, tortillas, or warm bread to soak up the flavorful sauce.
