Embark on a gastronomic journey to Switzerland with Vogelheu, a traditional bread pudding known for its simplicity and comforting flavors. This dish captures the essence of Alpine warmth, turning humble ingredients into a sweet, satisfying delight perfect for family gatherings or cozy evenings.

Ingredients

  • 4 cups stale bread, torn into small pieces (about 1.76 lb / 0.8 kg)
  • 2 cups milk
  • 4 eggs
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • 1 cup dried fruits (apricots, raisins, or your favorite mix)
  • Butter for greasing

Instructions

  1. Prepare the Bread

Preheat the oven to 350°F (175°C) and generously grease a baking dish with butter. Place the torn stale bread in a large bowl and pour the milk over it. Allow the bread to soak until softened, about 10 minutes.

  2. Mix the Egg Custard

In a separate bowl, whisk together eggs, sugar, vanilla extract, and a pinch of salt until smooth and well combined.

  3. Combine and Fold

Gently fold the egg mixture into the soaked bread until fully incorporated. Then, fold in the dried fruits, making sure they are evenly distributed throughout the mixture.

  4. Bake

Transfer the mixture to the prepared baking dish and spread it evenly. Bake in the preheated oven for 40–45 minutes, or until the top is golden brown and the center is set.

  5. Serve

Serve Vogelheu warm, allowing its sweet, comforting aroma to fill the room. For an extra touch of indulgence, top with a dollop of whipped cream or a sprinkle of powdered sugar.
