Nasi Goreng (Indonesian Fried Rice)

Ingredients

  • 4 cups cooked rice (preferably day-old)

  • 200 g chicken, shrimp, or tofu, cut into small pieces
  • 2 eggs, lightly beaten
  • 3 tablespoons sweet soy sauce (kecap manis)
  • 1 tablespoon soy sauce
  • 1 teaspoon shrimp paste (optional)
  • Salt and pepper to taste
  • 2 green onions, sliced
  • Fried shallots and cucumber slices for garnish

Instructions

  1. Prepare the Ingredients

    Heat vegetable oil in a large wok or skillet over medium heat. Sauté garlic, shallots, and chilies until fragrant.

  2. Cook the Protein

    Add chicken, shrimp, or tofu and stir-fry until cooked through. Push ingredients to the side of the wok. Pour in the beaten eggs and scramble until just set.

  3. Fry the Rice

    Add the cooked rice to the wok, breaking up any clumps. Stir-fry with the protein and aromatics for 3–5 minutes until the rice is heated through.

  4. Season

    Mix in sweet soy sauce, soy sauce, shrimp paste (if using), salt, and pepper. Stir well to ensure the rice is evenly coated with the sauces.

  5. Finish

    Add sliced green onions and toss briefly. Remove from heat.

  6. Serve

    Plate the Nasi Goreng and garnish with fried shallots and cucumber slices. Serve with prawn crackers or a fried egg on top for an authentic experience.
