Gurasa (Ethiopian Flatbread)

Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon active dry yeast
  • 1 1/4 cups warm water
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 2 tablespoons vegetable oil

Instructions

  1. Prepare the Dough

    In a small bowl, dissolve the yeast and sugar in warm water. Let it sit for 5–10 minutes until frothy. In a large mixing bowl, combine the flour and salt. Gradually add the yeast mixture and vegetable oil, stirring until a sticky dough forms. Knead the dough on a lightly floured surface for about 8–10 minutes until smooth and elastic.

  2. Ferment the Dough

    Place the dough in a lightly oiled bowl, cover it with a clean cloth, and let it rise in a warm place for 1–2 hours or until doubled in size.

  3. Cook the Gurasa

    Heat a non-stick skillet or cast-iron pan over medium heat. Divide the dough into small balls and flatten each into a round disc about 1/4 inch thick. Cook each disc for 2–3 minutes on one side until bubbles form, then flip and cook for another 2–3 minutes. The Gurasa should be golden and slightly spongy.

  4. Serve

    Serve warm with your favorite stews, lentil dishes, or as a wrap for meats and vegetables.
