Mbejú (Paraguayan Corn Pancakes)

- 2 cups cassava (yuca) starch

In a large bowl, combine cassava starch, grated cheese, and salt. Mix well. In a separate bowl, whisk together eggs, milk, and melted butter. Gradually add the wet ingredients to the dry mixture, stirring until a smooth, thick batter forms.

Cook the Mbejú
Heat a non-stick skillet over medium heat. Lightly grease the pan with a small amount of butter. Pour a portion of the batter into the skillet, spreading it into a round pancake about 1/2 inch thick. Cook for 3–4 minutes on each side, or until golden brown and crispy on the edges. Repeat with the remaining batter.
