Mbejú (Paraguayan Corn Pancakes)

Ingredients

  • 2 cups cassava (yuca) starch
  • 1 cup grated cheese (Paraguayan cheese, mozzarella, or queso fresco)
  • 1/2 cup milk
  • 2 tablespoons butter, melted
  • 1 teaspoon salt
  • 2 eggs

Instructions

  1. Prepare the Batter

    In a large bowl, combine cassava starch, grated cheese, and salt. Mix well. In a separate bowl, whisk together eggs, milk, and melted butter. Gradually add the wet ingredients to the dry mixture, stirring until a smooth, thick batter forms.

  2. Cook the Mbejú

    Heat a non-stick skillet over medium heat. Lightly grease the pan with a small amount of butter. Pour a portion of the batter into the skillet, spreading it into a round pancake about 1/2 inch thick. Cook for 3–4 minutes on each side, or until golden brown and crispy on the edges. Repeat with the remaining batter.

  3. Serve

    Serve Mbejú warm. It can be enjoyed plain, with more cheese, or with a touch of honey or dulce de leche for a sweet twist.
