Ingredients

  • 2 cups long-grain rice
  • 1/2 pound beef or chicken, cut into bite-sized pieces
  • 1 large onion, finely chopped
  • 2 tomatoes, chopped
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (optional for heat)
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • Salt and black pepper to taste
  • 3 tablespoons vegetable oil
  • 4 cups water or broth
  • 1/4 cup chopped fresh parsley or cilantro

Instructions

  1. Prepare the Ingredients

    Rinse the rice under cold water until the water runs clear. This helps remove excess starch and keeps the grains fluffy.

  2. Cook the Meat

    Heat vegetable oil in a large pot over medium-high heat. Add the meat and cook until browned on all sides. Remove the meat and set aside.

  3. Sauté the Vegetables and Spices

    In the same pot, add chopped onions, garlic, bell pepper, and tomatoes. Cook until softened and fragrant, about 5 minutes. Stir in paprika, cayenne, coriander, cumin, salt, and pepper.

  4. Combine Rice and Meat

    Return the meat to the pot. Add the rinsed rice and water or broth. Stir to combine, ensuring the rice is evenly coated with the spices.

  5. Simmer

    Bring to a boil, then reduce heat to low. Cover and simmer for 20–25 minutes, or until the rice is tender and the liquid is absorbed. Avoid stirring too much to prevent the rice from becoming mushy.

  6. Serve
