Ingredients
- 1 cup roasted peanuts (or natural peanut butter, unsweetened)
- 1 lb chicken, beef, or fish, cut into pieces
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 medium tomatoes, chopped
- 2 tablespoons tomato paste
- 4 cups chicken or vegetable stock
- 2 cups water
- 1–2 chili peppers, chopped (optional, adjust to taste)
- 2 medium carrots, sliced
- 1 medium sweet potato, peeled and cubed
- 1 bell pepper, chopped
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- Fresh parsley or cilantro for garnish

Prepare the Base
Heat vegetable oil in a large pot over medium heat. Sauté onion, garlic, and ginger until fragrant and translucent. Add chopped tomatoes and tomato paste, cooking until softened and well combined.

Add the chicken, beef, or fish pieces to the pot and brown slightly on all sides. Season with salt and pepper.
