Rolex (Ugandan Egg and Chapati Wrap)

Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 tablespoon vegetable oil (for dough)
- 3/4 cup water (adjust as needed for dough)
- 3 large eggs
- 1 small tomato, finely chopped
- 1 small onion, finely chopped
- 1 small green pepper, finely chopped
- Salt and pepper to taste
- 1 tablespoon vegetable oil (for frying)

Make the Chapati Dough
In a large bowl, combine flour and salt. Gradually add water and 1 tablespoon oil, mixing until a soft dough forms. Knead the dough for about 5–7 minutes until smooth and elastic. Cover the dough and let it rest for 20–30 minutes.

Prepare the Omelet Filling
In a bowl, beat the eggs with salt and pepper. Stir in chopped tomatoes, onion, and green pepper.

Cook the Chapati
Divide the dough into 4 equal portions. Roll each portion into a thin, round circle on a lightly floured surface. Heat a non-stick skillet or frying pan over medium heat. Cook each chapati for 1–2 minutes on each side until lightly golden and cooked through. Set aside.

Cook the Omelet
Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Pour in the egg mixture and cook until just set, gently folding if needed.

Assemble the Rolex
Place a cooked omelet on each chapati. Roll the chapati around the omelet tightly, folding in the sides to secure the filling.
