Borscht (Classic Ukrainian Beet Soup)

Ingredients
- 2 medium beets, peeled and grated
- 1 medium carrot, peeled and grated
- 1 medium potato, diced

- 1/2 small cabbage, shredded
- 2 cloves garlic, minced
- 4 cups beef or vegetable broth
- 1 tablespoon tomato paste
- 1 tablespoon vegetable oil
- 1 bay leaf
- 1 teaspoon sugar
- Salt and pepper to taste
- 2 tablespoons fresh dill, chopped
- Sour cream, for serving
- Optional: 1/2 pound beef or pork, cubed

If using meat, add it to the pot and brown lightly. Pour in the broth, bring to a boil, then reduce heat to simmer for 20–30 minutes until the meat is tender.

Add potatoes, cabbage, tomato paste, bay leaf, sugar, salt, and pepper. Simmer for another 20–25 minutes until vegetables are fully cooked and flavors meld together.
