Borscht (Classic Ukrainian Beet Soup)

Ingredients

  • 2 medium beets, peeled and grated
  • 1 medium carrot, peeled and grated
  • 1 medium potato, diced
  • 1 small onion, finely chopped
  • 1/2 small cabbage, shredded
  • 2 cloves garlic, minced
  • 4 cups beef or vegetable broth
  • 1 tablespoon tomato paste
  • 1 tablespoon vegetable oil
  • 1 bay leaf
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 2 tablespoons fresh dill, chopped
  • Sour cream, for serving
  • Optional: 1/2 pound beef or pork, cubed

Instructions

  1. Prepare the Vegetables

    Heat vegetable oil in a large pot over medium heat. Add onions and garlic, sautéing until translucent. Stir in carrots and beets, cooking for about 5–7 minutes until slightly softened.

  2. Cook the Meat (Optional)

    If using meat, add it to the pot and brown lightly. Pour in the broth, bring to a boil, then reduce heat to simmer for 20–30 minutes until the meat is tender.

  3. Add Remaining Ingredients

    Add potatoes, cabbage, tomato paste, bay leaf, sugar, salt, and pepper. Simmer for another 20–25 minutes until vegetables are fully cooked and flavors meld together.

  4. Finish the Soup

    Remove the bay leaf. Stir in fresh dill and adjust seasoning as needed.

  5. Serve

    Ladle hot Borscht into bowls and top with a spoonful of sour cream. Pair with rye bread for a traditional Ukrainian experience.
