Attiéké (Ivorian Cassava Couscous)

Experience the vibrant flavors of Ivorian cuisine with Attiéké, a traditional West African dish made from fermented cassava. Ingredients

  • 2 cups Attiéké (cassava couscous)
  • 1 teaspoon salt
  • 2 tablespoons vegetable oil or butter
  • 1/2 cup water (adjust as needed)
  • Optional: finely chopped onions, tomatoes, or chili peppers for garnish

Instructions

  1. Prepare the Attiéké

    Place the Attiéké in a large bowl. Sprinkle with salt and pour in water gradually, mixing gently with your fingers or a spoon until the grains are evenly moistened but not mushy. Let it sit for 5–10 minutes to absorb the water.

  2. Steam or Heat

    Option 1: Steam – Place the moistened Attiéké in a steamer basket over boiling water. Cover and steam for 10–15 minutes, stirring halfway through to ensure even cooking.

    Option 2: Microwave – Transfer the moistened Attiéké to a microwave-safe bowl, cover loosely, and microwave on high for 3–5 minutes, stirring halfway through.

  3. Fluff and Season

    Remove from heat and fluff the grains with a fork. Stir in vegetable oil or butter to add richness and prevent clumping. Adjust salt to taste.

  4. Serve

    Serve Attiéké warm as a side dish or base for grilled fish, meat, or sautéed vegetables. Garnish with fresh herbs, onions, or chili peppers for extra flavor and color.
