- 8 oz rice noodles

- 8 oz shrimp, chicken, or tofu
- 2 eggs, lightly beaten
- 1 cup bean sprouts
- 1/4 cup roasted peanuts, crushed
- 2 green onions, chopped
- 1/4 cup fresh cilantro, chopped
- Lime wedges, for serving
For the Sauce
- 3 tablespoons tamarind paste
- 3 tablespoons fish sauce
- 2 tablespoons sugar
- 1 tablespoon soy sauce
- 1 teaspoon chili flakes (optional)

Prepare the Noodles
Soak rice noodles in warm water for 20-30 minutes or until pliable. Drain and set aside.

Make the Sauce
In a small bowl, combine tamarind paste, fish sauce, sugar, soy sauce, and chili flakes. Stir until sugar is dissolved and set aside.

Cook the Protein
Heat vegetable oil in a large skillet or wok over medium-high heat. Add garlic and shallots, sautéing until fragrant. Add shrimp, chicken, or tofu, and cook until done.

Add Eggs and Noodles
Push the protein to one side of the pan and pour in the beaten eggs. Scramble until just set. Add the soaked noodles and pour the sauce over them. Toss everything together until the noodles are coated and heated through.

Stir in bean sprouts, green onions, and half of the crushed peanuts. Serve immediately, garnished with remaining peanuts, fresh cilantro, and lime wedges on the side.
