Rougaille (Mauritian Tomato-Based Stew)

Ingredients

  • 4 ripe tomatoes, chopped
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2 green chili peppers, sliced (optional, adjust to taste)
  • 2 tablespoons vegetable oil
  • 1 teaspoon turmeric powder
  • 1 teaspoon paprika
  • 1 teaspoon thyme (fresh or dried)
  • Salt and pepper to taste
  • Fresh cilantro, chopped, for garnish

Instructions

  1. Prepare the Base

    Heat vegetable oil in a large skillet or saucepan over medium heat. Add the onion, garlic, ginger, and green chili peppers. Sauté until fragrant and the onions become translucent.

  2. Cook the Tomatoes

    Add the chopped tomatoes, turmeric, paprika, thyme, salt, and pepper. Cook on medium heat, stirring occasionally, until the tomatoes break down into a thick sauce, about 10–15 minutes.

  3. Add the Protein

    Add your choice of chicken, fish, or shrimp to the tomato sauce. Stir to coat the pieces evenly. Cover and simmer:

    • Chicken: 25–30 minutes until cooked through
    • Fish: 10–12 minutes until tender
    • Shrimp: 5–7 minutes until pink and cooked
  4. Finish and Serve

    Adjust seasoning with salt and pepper. Remove from heat and garnish with fresh cilantro.
