Perfect for dinner parties or a special weekend treat, this upside-down tart combines buttery pastry with rich caramel and juicy pineapple for a dessert that’s as stunning as it is delicious.

Ingredients

  • 1 ripe pineapple, peeled, cored, and sliced into rings
  • 1 sheet puff pastry (thawed if frozen)
  • 1/2 cup (100 g) granulated sugar
  • 1/4 cup (60 g) unsalted butter
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional: whipped cream or vanilla ice cream for serving

Instructions

  1. Caramelize the Pineapple

In a heavy, ovenproof skillet, melt butter over medium heat.

Add sugar and stir until it dissolves and turns a golden caramel color.

Add vanilla extract and a pinch of salt, stirring to combine.

Arrange the pineapple rings in the caramel, cooking for 5–7 minutes until lightly caramelized.

  2. Prepare the Puff Pastry

Preheat the oven to 375°F (190°C).

Roll out the puff pastry slightly to fit over the skillet.

Carefully place the pastry over the caramelized pineapple, tucking the edges down around the fruit.

  3. Bake the Tarte Tatin

Transfer the skillet to the preheated oven.

Bake for 25–30 minutes, or until the pastry is golden brown and puffed.

  4. Invert and Serve

Allow the tart to cool for 5 minutes before carefully inverting it onto a serving plate.

Serve warm, optionally with whipped cream or vanilla ice cream.
