Gaeng Daeng (Thai Red Curry)

Ingredients

  • 1 lb (450 g) chicken, beef, pork, or tofu, thinly sliced
  • 2 tablespoons red curry paste
  • 1 can (14 oz / 400 ml) coconut milk
  • 1 tablespoon vegetable oil
  • 1 tablespoon fish sauce (or soy sauce for vegetarian)
  • 1 teaspoon sugar
  • 4-5 kaffir lime leaves, torn
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 small eggplant, cut into bite-sized pieces (optional)
  • Fresh Thai basil leaves, for garnish
  • Cooked jasmine rice, for serving

Instructions

  1. Prepare the Curry Base

    Heat vegetable oil in a large skillet or wok over medium heat. Add the red curry paste and sauté for 1-2 minutes until fragrant.

  2. Add Coconut Milk

    Gradually stir in half of the coconut milk, mixing well with the curry paste until smooth and aromatic.

  3. Cook the Protein

    Add the sliced chicken (or your chosen protein) to the skillet. Cook for 5-7 minutes, stirring occasionally, until the meat is mostly cooked through.

  4. Add Vegetables and Seasoning

    Stir in the bell peppers, eggplant (if using), torn kaffir lime leaves, fish sauce, and sugar. Pour in the remaining coconut milk. Simmer over medium heat for 5-10 minutes until the vegetables are tender and the flavors are well combined.

  5. Finish the Curry

    Taste and adjust seasoning if needed. Remove from heat and stir in fresh Thai basil leaves just before serving.

  6. Serve

    Ladle the red curry over steamed jasmine rice. Garnish with extra basil leaves for color and fragrance.
