Instructions

  1. Prepare the Batter

    In a medium bowl, whisk together the eggs, sugar, and salt. Gradually add the warmed milk, mixing well. Slowly sift in the flour and stir until smooth. Add melted butter and mix until fully incorporated. Let the batter rest for 20–30 minutes at room temperature.

  2. Cook the Blini

    Heat a non-stick skillet or crepe pan over medium heat and lightly brush with butter. Pour a small amount of batter into the pan, swirling to create a thin, even layer. Cook for 1–2 minutes, until bubbles form on the surface and the edges begin to lift. Flip and cook for another 1–2 minutes until golden. Repeat with the remaining batter, adding more butter as needed.

  3. Serve

    Stack the cooked blini on a plate and keep warm. Serve with your choice of sweet or savory toppings, such as sour cream and caviar, smoked salmon, jam, honey, or fresh berries.
