Pârjoale (Romanian Meat Patties)

Ingredients

  • 500 g (1 lb) ground pork or a mix of pork and beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 slice of bread, soaked in water or milk and squeezed
  • 1 egg
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 3–4 tablespoons vegetable oil for frying
  • Optional: 1 teaspoon paprika or chili flakes for a bit of heat

Instructions

  1. Prepare the Mixture

    In a large bowl, combine the ground meat, chopped onion, minced garlic, soaked bread, egg, parsley, thyme, salt, and pepper. Mix thoroughly until all ingredients are well incorporated.

  2. Shape the Patties

    With wet hands, form the mixture into small, oval-shaped patties about the size of your palm. Press gently to ensure they hold together during frying.

  3. Fry the Pârjoale

    Heat vegetable oil in a large skillet over medium heat. Fry the patties in batches, cooking 4–5 minutes per side or until golden brown and cooked through. Transfer to a plate lined with paper towels to remove excess oil.

  4. Serve

    Serve the Pârjoale hot, paired with mashed potatoes, pickles, or a fresh salad. For an authentic touch, drizzle with a little sour cream or serve with polenta.
