Ingredients

- 1/4 cup (60 ml) white vinegar
- 2 tbsp (30 g) ghee or butter
- 1 tsp (5 g) ground cumin

Cook the Meat
In a large pot, add the beef or lamb chunks and cover with water. Bring to a boil, skimming off any foam. Reduce heat to low, cover, and simmer for 1.5 to 2 hours until the meat is tender. Remove the meat and set aside, reserving the broth for later.

Cook the Rice
In a medium pot, add the rice and 4 cups of the reserved broth. Bring to a boil, reduce heat to low, cover, and cook for 15-20 minutes until the rice is fluffy and fully cooked.

Toast the Pita Bread
Preheat the oven to 350°F (175°C). Place the pita bread squares on a baking sheet and toast until golden and crispy, about 10 minutes.

Prepare the Garlic-Vinegar Sauce
Melt the ghee or butter in a small skillet over medium heat. Add the minced garlic and sauté until golden brown. Stir in ground cumin, then add white vinegar. Let the mixture simmer for a minute, then remove from heat.

In a large serving dish, layer the toasted pita bread squares at the bottom. Pour a cup of warm broth over the bread to soften slightly. Add the cooked rice on top, followed by the meat chunks. Drizzle the garlic-vinegar sauce evenly over the dish.
