Fa’ausi (Samoan Coconut Caramel Pudding)

- 1 medium taro (or 2–3 cups cooked breadfruit, pumpkin, or ripe plantains)

- 1/2 cup water
- 2 cups coconut cream (thick and rich)

Prepare the Base
Peel and cut the taro into chunks. Boil in salted water until tender, about 20–25 minutes. Drain and set aside to cool slightly.
Once cool, slice or mash the taro depending on your texture preference — traditional Fa’ausi often uses thick slices.

Make the Coconut Caramel Sauce
In a saucepan, combine brown sugar and water over medium heat. Stir until the sugar dissolves and the mixture turns into a light caramel (about 5–7 minutes).
Slowly add the coconut cream, stirring constantly. The mixture will bubble — keep stirring until it becomes smooth and slightly thickened, about 10 minutes.

Place the cooked taro pieces in a baking dish or heatproof bowl.
Pour the hot coconut caramel sauce evenly over the taro, ensuring it’s fully coated.
Let it rest for at least 10 minutes to allow the sauce to soak in. Some versions are gently baked for 10–15 minutes at 350°F (175°C) to deepen the caramel flavor.
