Rellenitos (Guatemalan Sweet Plantain Dumplings)

Ingredients

  • 4 ripe plantains (yellow with black spots)
  • 1 cup cooked black beans, mashed
  • 1/2 cup brown sugar (divided)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Vegetable oil, for frying
  • Powdered sugar (optional, for garnish)

Instructions

  1. Prepare the Plantains

    Peel the plantains and cut them into large chunks. Boil them in water with a pinch of salt for about 15–20 minutes, or until soft. Drain and mash until smooth.

  2. Prepare the Filling

    In a small bowl, mix the mashed black beans with half of the brown sugar and the cinnamon. Adjust sweetness to taste.

  3. Form the Rellenitos

    Take a portion of mashed plantain (about the size of a golf ball) and flatten it in your hand. Place a spoonful of the black bean mixture in the center and carefully fold the plantain around the filling, shaping it into an oval or ball, fully enclosing the beans. Repeat with remaining plantains and filling.

  4. Fry to Golden Perfection

    Heat about 1/4 inch of vegetable oil in a skillet over medium heat. Fry the Rellenitos in batches, turning occasionally, until golden brown on all sides. Remove with a slotted spoon and drain on paper towels.

  5. Serve

    Roll the warm Rellenitos in the remaining brown sugar or sprinkle with powdered sugar for an extra touch of sweetness. Serve immediately.
