Ratatouille (French Vegetable Stew)

Ingredients

  • 1 large eggplant, diced
  • 2 zucchini, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced

  • 4 cloves garlic, minced
  • 4 large tomatoes, chopped (or 1 can of crushed tomatoes)
  • 3 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil, for garnish

Instructions

  1. Prepare the Vegetables

    Wash and dice the eggplant, zucchini, and bell peppers into uniform pieces. Chop the onion and tomatoes, and mince the garlic.

  2. Sauté the Aromatics

    Heat olive oil in a large skillet or Dutch oven over medium heat. Add the onion and garlic, sautéing until soft and fragrant, about 5 minutes.

  3. Cook the Vegetables

    Add the diced eggplant, zucchini, and bell peppers to the skillet. Cook, stirring occasionally, until the vegetables begin to soften, about 10 minutes.

  4. Add Tomatoes and Herbs

    Stir in the chopped tomatoes (or crushed tomatoes), thyme, rosemary, oregano, salt, and pepper. Reduce heat to low, cover, and simmer for 25–30 minutes, stirring occasionally, until all vegetables are tender and the flavors are well blended.

  5. Serve

    Remove from heat and let the Ratatouille rest for a few minutes. Garnish with fresh basil before serving.
