Ingredients

  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 teaspoon lemon juice

  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, cold and cubed

Instructions

  1. Prepare the Crust

    In a large bowl, combine flour, salt, and sugar. Cut in the cold butter until the mixture resembles coarse crumbs. Gradually add ice water, 1 tablespoon at a time, mixing until the dough holds together. Divide into two disks, wrap in plastic, and refrigerate for at least 1 hour.

  2. Make the Filling

    In a large bowl, toss sliced apples with granulated sugar, brown sugar, flour, cinnamon, nutmeg, salt, and lemon juice. Set aside.

  3. Prepare the Crumb Topping

    In a medium bowl, combine flour, sugars, cinnamon, and salt. Cut in cold butter until the mixture is crumbly. Set aside.

  4. Assemble the Pie

    Preheat oven to 375°F (190°C). Roll out one dough disk and fit it into a 9-inch pie pan. Pour the apple filling into the crust, spreading evenly. Sprinkle the crumb topping over the apples. Roll out the second dough disk (optional for a full top crust) or leave the crumb topping exposed for a classic Dutch style.

  5. Bake

    Bake for 50-60 minutes, or until the topping is golden brown and the filling is bubbling. If the edges brown too quickly, cover with foil.
